Banana Bread
Ingredients
- 1/2 cup sugar
- 1/2 cup shortening
- 2 eggs
- 3 bananas, mashed
- Pinch of salt
- 1 tsp baking soda
- 1 3/4 cup flour
Instructions
- Grease and line loaf pan(s) with parchment paper
- Cream shortening and sugar
- Add eggs and cream till fluffy
- Add bananas, salt, baking soda and flour. Mix well.
- Preheat oven to 350F
- Pour banana bread into the pan(s) leaving 1/4 from the top empty to allow for rising.
- Tap the pan(s) a few times on the counter to even out the mixture
- Bake ~30-45 mins (tops begin to brown), cover with tinfoil and continue baking for ~15 mins

- Makes 2 mini loaves or 1 medium loaf
