Blueberry Cake
Ingredients
- 2 cups flour
- 1/2 cup sugar
- 3 tsp baking powder
- 1/4 tsp salt
- 1/2 cup butter
- 2 eggs, beaten
- 1 cup milk
- 1 1/2 cups blueberries
Instructions
- Line loaf pan(s) with parchment paper and preheat oven to 350F
- Mix together flour, sugar, baking powder and salt
- Cut in butter
- In a separate bowl beat eggs and milk, add to dry ingredients and mix
- Fold in blueberries
- Pour blueberry cake into loaf pan(s) leaving 1/4 from the top empty for rising
- Tap the pan(s) a few times on the counter to even out the mixture
- Sprinkle tops with coconut
- Bake uncovered ~30-45 mins until tops begin to brown, then cover with tinfoil and continue to bake until done (~15 mins)

- Makes 2 mini loaves or 1 regular loaf
