Blueberry Cake

Instructions

  1. Line loaf pan(s) with parchment paper and preheat oven to 350F
  2. Mix together flour, sugar, baking powder and salt
  3. Cut in butter
  4. In a separate bowl beat eggs and milk, add to dry ingredients and mix
  5. Fold in blueberries
  6. Pour blueberry cake into loaf pan(s) leaving 1/4 from the top empty for rising
  7. Tap the pan(s) a few times on the counter to even out the mixture
  8. Sprinkle tops with coconut
  9. Bake uncovered ~30-45 mins until tops begin to brown, then cover with tinfoil and continue to bake until done (~15 mins)
