Chocolate Mushrooms
Ingredients
- 1 Cup Chickpeas
- 1/2 Cup Unsweetened Almond Milk
- 3/4 Cup Chocolate Chips - melted
- 1/2 Cup Sugar
- 1/2 tsp Salt
- 2 Tbsp Vanilla
- 1 Tbsp Apple Cider Vinegar
- 1 Cup Flour
- 3/4 tsp Baking Powder
- 1/4 tsp Baking Soda
Instructions
- Blend Chickpeas and Almond Milk
- While Chickpeas are blending melt Chocolate Chips in 15 second increments, stirring between each
- Mix melted Chocolate with Chickpeas and Milk
- Mix in sugar and salt
- Add in Vanilla, Apple Cider Vinegar
- Move mixture to a large bowl and add Flour, Baking Powder, and Baking Soda
- Mix all ingredients
- Scoop into small muffin cups and bake at 350° for 5 minutes, then turn and 5 minutes
- Remove from pan and let cool
Notes
- Tried as mini muffins, regular muffins and cookies. Best option = mini muffins (use small scoop)
