White Bread/Buns
Ingredients
- 5 to 6 cups all-purpose flour
- 3 Tbsp sugar
- 2 packets instant yeast (4 1/2 tsp)
- 2 tsp salt
- 1 1/2 cups water
- 1/2 cup whole milk
- 2 Tbsp butter
Instructions
- Combine 2 cups flour, sugar, instant yeast and salt in stand mixer bowl and stir until blended.
- Combine water, milk and butter. Microwave on high (15 sec increments) until very warm but not hot to the touch (120F - 130F, butter won’t melt completely). Add to flour mixture.
- Beat 2 minutes at medium speed, scraping bowl occasionally.
- Add 1 cup flour; beat 2 minutes at high speed, scraping bowl occasionally.
- Stir in just enough remaining flour so that the dough will form into a ball.
- Knead on floured surface till smooth, elastic & springs back when lightly pressed (~6-8 mins).
- Form into a ball, place in oiled bowl, cover with a towel and let rest for 10 minutes.
Bread
- Preheat oven 400F and spray two 8.5” x 4.5” loaf pans with nonstick cooking spray
- Cut dough into 2 equal pieces. Roll each piece of dough into 12x7 rectangle using a rolling pin.
- Beginning at short end of each rectangle, roll up tightly. Pinch seams and ends to seal.
- Place, seam sides down, in greased loaf pans.
- Cover with towel; let rise in warm place until doubled in size, about 45 minutes.
- Bake for 20-30 mins or until golden brown.
- Remove from pans by running a knife around the edges and invert onto a wire rack.
- Grease top of loaves with butter or margarine.
Buns
- Line __ x __” pan with parchment paper
- Cut dough into 15 equal pieces. Roll each piece of dough into a ball pinching the seam to seal
- Place, seam sides down, on lined pan in 3 rows of 5.
- Cover with towel; let rise in warm place until doubled in size, about 45 minutes.
- Preheat oven 400F
- Bake for 20-30 mins or until golden brown.
- Remove from pan with a spatula and place onto a wire rack.
- Immediately grease top of buns with butter or margarine
