Black Bean and Quinoa Burgers

Instructions

  1. In a saucepan, bring quinoa and 1 cup water to a boil over medium-high heat. Reduce heat to low, cover pan and cook for 10-15 mins until water is absorbed and quinoa is cooked. Remove from heat.
  2. Heat oil in a small pan over medium heat.
  3. Saute onion and garlic until softened, 5-6 minutes. Place mixture into a large bowl.
  4. Add black beans to the bowl and smash until a pasty mixture forms.
  5. Add the rest of the ingredients and mix throughly
  6. Form into 6 equal patties and place on a baking sheet, cover with plastic wrap and refrigerate for a few hours or overnight
  7. When ready to eat preheat oven to 400F and line a baking sheet. Place patties on baking sheet and bake for 10-12 minutes or until golden brown and crispy. Flip patty and cook for an additional 10 minutes. If using a griddle heat 4-6 minutes per side or until slightly golden.
