Black Bean and Quinoa Burgers
Ingredients
Patty
- 1/2 cup quinoa, dry
- 1 tsp olive oil
- 1/2 onion, chopped
- 3 cloves of garlic, minced
- 15 oz black beans, drained
- 2 Tbsp tomato paste
- 1 large egg
- 2/3 cup frozen corn
- 1/2 cup cilantro, chopped
- Chipotle peppers (1 cube)
- 2 tsp cumin
- 1/2 cup rolled oats
- 1/4 cup flour
Sauce
- 1/2 cup plain yogurt
- 1 Tbsp honey
- 1 Tbsp dijon mustard
Instructions
- In a saucepan, bring quinoa and 1 cup water to a boil over medium-high heat. Reduce heat to low, cover pan and cook for 10-15 mins until water is absorbed and quinoa is cooked. Remove from heat.
- Heat oil in a small pan over medium heat.
- Saute onion and garlic until softened, 5-6 minutes. Place mixture into a large bowl.
- Add black beans to the bowl and smash until a pasty mixture forms.
- Add the rest of the ingredients and mix throughly
- Form into 6 equal patties and place on a baking sheet, cover with plastic wrap and refrigerate for a few hours or overnight
- When ready to eat preheat oven to 400F and line a baking sheet. Place patties on baking sheet and bake for 10-12 minutes or until golden brown and crispy. Flip patty and cook for an additional 10 minutes. If using a griddle heat 4-6 minutes per side or until slightly golden.
