Chickpea Veggy Burgers
Ingredients
Patty
- 15 oz chickpeas, rinsed and mashed
- 1/2 a red onion finely diced
- 2 mini zucchini/1 egg plant, grated
- 3 Tbsp cilantro
- 3 Tbsp red or white wine vinegar
- 1 Tbsp Sriracha sauce
- 2 Tbsp peanut or soy butter
- 1 tsp cumin
- 1 tsp garlic powder
- 2 tsp pepper
- 1/2 tsp salt
- 1 cup quick oats
- 2 Tbsp olive oil
Instructions
- Mash chickpeas in a bowl
- Add all ingredients and mix well
- Form patties (6-8)
- Fry in oil for 3-5 minutes on each side
