Chipotle Chicken Chili

Instructions

  1. Heat olive oil in a large pan over medium heat
  2. Add onion and garlic, sauté for ~2-3 mins (until onion is transparent)
  3. Stir in all ingredients and bring to a boil over medium-high heat (lid on)
  4. Reduce heat to low and simmer for 1 hour (lid on). Stir occasionally.
  5. Remove chicken and shred with forks. Return shredded chicken to the pot and stir.
