Chipotle Chicken Chili
Ingredients
- 2 Tbsp olive oil
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 2 chicken breasts
- 32oz V8 juice
- 15oz diced tomatoes
- 15 oz kidney beans, drained and rinsed
- 15 oz black beans, drained and rinsed
- 1 cup frozen corn
- Chipotle pepper in adobo sauce (1-2 cubes)
- 1 Tbsp chili powder
- 1/2 Tbsp cumin powder
- 1 tsp oregano
Instructions
- Heat olive oil in a large pan over medium heat
- Add onion and garlic, sauté for ~2-3 mins (until onion is transparent)
- Stir in all ingredients and bring to a boil over medium-high heat (lid on)
- Reduce heat to low and simmer for 1 hour (lid on). Stir occasionally.
- Remove chicken and shred with forks. Return shredded chicken to the pot and stir.
