Coconut Curry Rice & Lentils
Ingredients
- 3/4 cup red lentils
- 1/2 basmati rice
- 1/2 tsp of turmeric, ginger, salt, cumin, garlic powder, garam masala
- 1/4 to 1/2 tsp cayenne
- 2 tsp sugar
- 2 Tbsp onion flakes
- 3 Tbsp sundried tomatoes, chopped
- 3 Tbsp coconut powder
Instructions
At home:
- Combine all ingredients into a baggie.
In camp:
- Bring 3 cups of water to a boil.
- Add baggie to boiling water.
- Bring to a boil and simmer, stirring for 15 minutes
