Curried Chickpea Stew
Do no re-do, sub par recipe.
Ingredients
- Chickpeas rinsed & drained
- 29 Oz can diced tomatoes with liquid
- 1/4 red, orange, yellow & green bell pepper, chopped
- 1/2 medium yellow onion, finely chopped
- 2 cloves garlic
- 2 tsp curry powder
- 2 tsp ground cumin
- 1/4 tsp red pepper flakes or to taste
- juice of 1 lime (~2 Tbsp)
Instructions
- In medium saucepan, combine all ingredients
- Bring to boil over high heat
- Reduce to medium heat; cover, simmer for 15 minutes or until vegetables are tender
