Ingredients
- 1 small diced Onion (~1.5 cups)
- 1.5 tsp minced garlic (3 cloves)
- 1 Tbsp grated ginger
- 1 tsp ground coriander
- 1 tsp ground fenugreek
- 0.5 tsp cumin
- 4 tsp garam masala
- 1 tsp turmeric
- 200g red lentils
- 1 can diced tomatoes (~2 cups)
- 1 can coconut milk (~400 ml)
- 0.25 - 0.5 cups water or vegetable broth
- rice
Instructions
- In dutch oven fry onions until transparent.
- Add garlic & ginger, continue cooking until fragrant.
- Add tomatoes, coconut milk and stock/water. Bring to simmer.
- Add lentils, continue stirring until lentils are cooked.
- Serve on top of rice with mango chutney and plain yogurt
