  1. In dutch oven fry onions until transparent.
  2. Add garlic & ginger, continue cooking until fragrant.
  3. Add tomatoes, coconut milk and stock/water. Bring to simmer.
  4. Add lentils, continue stirring until lentils are cooked.
  5. Serve on top of rice with mango chutney and plain yogurt
