No Butter Chicken
Ingredients
- 1 Tbsp Olive Oil
- 1 Small Onion, diced
- 3 tsp Garlic Cloves
- 2 Chicken Breasts, cubed
- 1 tsp Ground Ginger (1 Tbsp minced if fresh)
- 1/2 tsp Ground Cumin
- 1 Tbsp Garam Masala
- 1/2 tsp Ground Coriander
- 1 tsp Crushed Red Pepper Flakes
- 1 tsp Ground Turmeric
- 1 tsp Salt
- 3 Tbsp Tomato Paste
- 1/2 Cup Yogurt
- 1/2 Cup Chicken Broth
- 1/4 Cup Coconut Milk
- 1 Tbsp Cilantro, chopped
- 2 Cups Rice
Instructions
- Set a medium saucepan over medium heat. Sauté onion in oil until almost tender
- Add ginger and garlic, cook 1-2 minutes or until fragrant
- Add chicken and cook for a few minutes, until surface is cooked
- Add spices and toast 1 minute. Mix in tomato paste
- Add yogurt, chicken stock and coconut milk. Mix well
- Cover and let simmer/reduce until chicken is cooked through. Approximately 10-15 minutes
- Serve with rice, garnish with cilantro
